Turkey medallions with potato dumplings & red cabbage

Ingredients:

(Serves 4 people)

Ingredients for the potato dumplings:

  • 1 kg potatoes
  • 100 g cornstarch
  • 100 g wheat flour
  • 2 eggs
  • salt

Ingredients for the „Blaukraut“:

  • 500 g red cabbage
  • 1 onion
  • 1 apple (in our case half a big apple)
  • sugar

Ingredients for the medallions:

  • 400 g medallions (turkey or pork)
  • salt and pepper
  • 1 onion
  • water
  • cream
  • vegetable broth

Instructions:

  1. Peel potatoes and boil them in water.
  2. Mash the finished potatoes and then knead eggs, flour and cornflour. Then form hand-sized dumplings from them.
  3. Put the dumplings into boiling salted water. The dumplings are ready when they float to the surface.
  4. Chop an onion and add it to the pot, chop the red cabbage and add it to the pot along with some water. Cook until the red cabbage is soft and cooked.
  5. Then add the apple and sweeten with sugar (to your taste). Boil the red cabbage for a long time. 
  6. Put the medallions with pepper and salt and fry them in the pan on both sides.
  7. Then remove the meat from the pan again and fry an onion. Stir in water, cream and vegetable broth until you have a creamy sauce.
  8. Then add the medallions back in, season with pepper and you’re done.
  9. At the end you can garnish everything on a plate and voilà – enjoy! Or as we say in German: “Lass es dir schmecken!”
