Ingredients:
- 200 g of boiled and cooled beetroot (or you can use a canned one as I do – tastes the same and takes less time)
- 1 big cucumber
- 2 hard boiled eggs
- 200 g of sour cream and 1,5 liters of cold water (instead you can also use 1,5 liters of kefir)
- some fresh dill
- salt
- spring onion leaves
Instructions:
- Cut the beetroot, cucumber, egg and dill.
- Put the beetroot in a bowl, cover it with water and put in cucumber, eggs and dill.
- Add the sour cream and mix it till it gets pink.
- Add salt for the taste.
- Put some freshly chopped spring onions on top before serving.
Tip: Šaltibarščiai is usually served with boiled or grilled potatoes – preferably grilled.
