Lithuanian Cold Beet Soup – Šaltibarščiai

 Check out this delicious Lithuanian recipe from Marija.

Ingredients:

  • 200 g of boiled and cooled beetroot (or you can use a canned one as I do – tastes the same and takes less time)
  • 1 big cucumber
  • 2 hard boiled eggs
  • 200 g of sour cream and 1,5 liters of cold water (instead you can also use 1,5 liters of kefir) 
  • some fresh dill
  • salt
  • spring onion leaves

Instructions:

  1. Cut the beetroot, cucumber, egg and dill. 
  2. Put the beetroot in a bowl, cover it with water and put in cucumber, eggs and dill.
  3. Add the sour cream and mix it till it gets pink. 
  4. Add salt for the taste. 
  5. Put some freshly chopped spring onions on top before serving. 

Tip: Šaltibarščiai is usually served with boiled or grilled potatoes – preferably grilled.
