Ingredients:
(Serves 5 people)
- 8 yellow peppers
- 1 kg potatoes
- 3 lemons
- 60 ml vegetable oil
- salt and pepper
- 250 g chicken
- 1 green pepper
- 100 g mayonnaise
- 1 avocado
- 1 carrot
- olives
- 2 eggs
Instructions:
- Boil the potatoes with a little salt to prevent them from falling apart. Peel the potatoes when they are still warm, mash them and then press them.
- Prepare the yellow pepper sauce: remove the seeds and veins, cut the yellow peppers and boil them until they become soft, remove their shells and blend the yellow peppers.
- Add the oil, the lemon juice, pepper, salt and the yellow pepper sauce to the pressed potatoes. Mix very well by kneading the dough with your hands.
- Boil the chicken, carrots and the green pepper with a little salt (do not overcooked the carrots). Then, remove them from the water, chop the carrot and the green pepper into squares and shred the chicken.
- Mix the shredded chicken, the carrots´ squares and the mayonnaise.
- Take a portion of the potatoes´ dough and cover the bottom of a glass mold with it . Place the avocado slices over the dough.
- Add another small portion of dough and place the mixture of mayonnaise, chicken and carrots and the green pepper squares over the dough.
- Cover with the remaining dough.
- Put one slide of a boiled egg and some olives over the final layer.
