Echpochmak (өчпочмак) / Triangle

Ingredients:

(For 14-15 triangles)

Ingredients for the dough:
  • Warm water (not hot) – 1 cup
  • Sunflower oil – 4 table spoons
  • Salt – 1/2 tea spoon
  • Sugar – 1/2 tea spoon
  • Yeast – 1 pack (~7g)
  • Flour ~ 400 g
Ingredients for the filling:
  • Chicken fillet  ~ 200g
  • Potato – 1kg
  • Onion – 1 (big)
  • Ground black pepper – 1 table spoon
  • Salt – 1 table spoon
  1. In container put water. Then add 4 table spoons of oil, pinch of salt and sugar, add the package of yeast. Stir the mixture intensively untill the yeast dissolves.
  2. Gradually add 400-450 g of flour into the mixture and keep stirring. Keep kneading the dough. Better to add the flour by little portions.
  3. Cover the dough with towel or a plastic wrap and let it sit in a warm place for 30-60 mins until it rises and doubles in size.
  4. Peel vegetables.
  5. Potatoes, fillet and onion cut in cubes of 5 mm. Put everything in large container. Mix the filling with salt and pepper.
  6. Make 50g balls from the dough. Choose and flatten one for one triangle and add the filling in the middle. If you want the filling more tender, fluffy and to have creamy taste – add the small grinded cube of butter on the top of the filling right before the pinching of the dough in isosceles triangle shape.
  7. Bake in the oven at 180 degrees for about 25-30 mins.
