Ingredients:
Samcan Panggang:
- 1 Pork belly
- Five spices (China spices)
- Garlic powder
- salt
Sambal Mata:
- Coconut oil
- 3 big onions
- 1 lime
- 5 lime leaves
- 1 garlic clove
- 1 lemongrass
- salt
Instructions:
- Prepare the pork: wash and dry the skin with the kitchen paper.
- Pre-heat the oven for 200 degrees.
- Cut the pork into big slices.
- Season with 5 spices (China spices) and garlic powder. Make sure all parts are seasoned!
- Sprinkle the salt on the skin.
- Put in the oven for 1 hour.
- Meanwhile prepare Sambal Mata.
- Peel the onion and cut into thin slices.
- Remove the lime leaves stalks and cut leaves and chili.
- Peel the garlic. Finely chop it and lemongrass.
- Heat the coconut oil and fry garlic and lemongrass for just 30 sec.
- Put everything in the bowl, add some salt and squish the lemon.
- Remove pork from the oven.
- Serve with rice.
